Preparation

  1. Peel the yam and slice it into small pieces. Wash very well and keep in a bowl.
  2. Wash the scent leaf and chop into pieces.
  3. Wash and slice the onion into pieces.
  4. Wash the scotch bonnet and grind it.
  5. Wash the oxtail and set it aside.

Procedures

  1. Start by cooking the oxtail with thyme, scotch bonnet, a little salt, one seasoning cube, and onion.
  2. Continue cooking until the oxtail becomes tender. This should be cooked with enough water.
  3. Add the peeled yam and pepper soup spice.
  4. Add more salt and one seasoning cube if need be.
  5. Add the scotch bonnet.
  6. Then, add more water to cook the yam.
  7. Allow to cook for about 15 minutes.

Start by cooking the goat meat first:

  3. Add enough water to cover the yams.
  4. Add a level teaspoon of salt.
  5. Cook for about 15 minutes.
  6. Then strain out the water and set aside.
  7. Now wash and cut the fish into suitable sizes, place in another pot, add water to almost the level of the fish.
  8. Add the sliced onions, seasoning cube and salt to taste.
  9. Leave to boil for about just 5 minutes to avoid overcooking the fresh fish.
  10. Add the pre-boiled yams.
  11. Add the scorched bonnet, pepper soup spice and scent leaves.
  12. Allow to boil for 5 more minutes.
