How To Cook Delicious Jollof Rice With Stockfish

Jollof rice is one of the most popular West African dishes eaten in Nigeria, Ghana, Togo, Senegal, Gambia, Mali, Sierra Leone, Cameroon, Ivory Coast, and Liberia regions. Each of these West African countries, however, has its own version of this meal. It’s delicious, cheap and easy to make.

Jollof rice is usually cooked with beef, chicken, turkey, and fresh fish but I will be showing you how to cook jollof rice with rockfish. So, if you want a unique and tasty Jollof rice, try cooking with stockfish as I did.

Ingredients:

  1. Rice (parboiled and washed)
  2. Stockfish
  3. Beef
  4. Fresh tomatoes and tomato paste
  5. Scotch bonnet pepper
  6. Thyme
  7. Nutmeg
  8. Rosemary
  9. Salt
  10. Bayleaf
  11. Red bell pepper
  12. Seasoning cube
  13. Ginger
  14. Garlic
  15. Chicken spice
  16. Groundnut Oil
  17. Onion
  18. Spring onion
  19. Curry powder

Procedures:

  1. Soak the stockfish overnight so as to soften it.
  2. Start by cooking the stockfish (without water) and beef with bay leaf, onion, curry, ginger, garlic, scotch bonnet pepper, seasoning cube, salt, thyme, rosemary and nutmeg.
  3. Then, add water to cook the stockfish.
  4. After cooking for like 15 to 20 minutes, remove the beef and put in the oven or fry while you continue cooking the stockfish.
  5. Blend the fresh tomatoes, onion and red bell pepper.
  6. Add groundnut oil into a pot and heat for 40 seconds.
  7. Add two spoonfuls of tomato paste and fry for 5 minutes and add the blended tomatoes, cook until the water is dried up.
  8. Add salt, curry powder, season cube, thyme, chicken stock, nutmeg.
  9. Stir very well and add the stockfish without the stock.
  10. Cover and steam for 10 minutes. Remove the stockfish from the tomato sauce and add the stockfish stock and more water to cook the rice.
  11. After leaving it to boil, pour in the parboiled and washed rice.
  12. Cover and cook with medium heat for 15 minutes.
  13. Then, add back the stockfish and cook till the rice is fully cooked.
  14. Lastly, slice some spring onion and add to it. Leave it to steam for 30 seconds.
  15. Food is ready!
